DELICIOUS WONTON NOODLE/SOUP

  4 persons

12-15 pieces of North South wonton pastries, 3 coils North South wonton noodles, 5ozs/150g choy sum/mustard greens (parboiled & cut into 2in/5cm lengths), 1/2 stalk spring onion (chopped).

Filling Ingredients
3 ozs/90g meat (minced), 1.5ozs/45g prawns (minced), 1oz/30g crabmeat (flaked), 1/2 stalk spring onion (finely chopped), a little pepper, a little salt, 1/2 tsp cornflour

Soup Ingredients
1 pt/600ml water, 1 chicken stock cube

Sauce Ingredients (for each portion of noodles)
1 tsp light soya sauce, 1 tsp oil, 1/2 tsp dark soya sauce, 1/2 tsp chilli sauce, a little sesame oil

THE STEPS


1.


Mix the filling ingredients well. Put a spoonful of meat mixture into each wonton pastry.

Wet edges, fold diagonally and seal by pressing all the edges firmly together.

Heat soup ingredients and bring to the boil. Add wonton and cook till they rise to the surface.

Dish out into individual bowls. Sprinkle with chopped spring onion.


5.


Scald wonton noodles. Toss each in sauce ingredients in individual plates.


6.


Top with parboiled choy sum. Serve with a bowl of wonton soup each.
